A favorite at our house for birthday meals and special occasions!
Ingredients:
8oz cream cheese
1c sour cream
10oz fresh spinach, wilted & chopped (you can use most of one of our 1lb bags and save the extra for a salad, or if you prefer to go lighter, try a 1/2 pound bag)
1 tsp minced garlic
1/2t salt
1/4t pepper
1/2c grated parmesan cheese
1 1/2c grated mozzarella, divided
1T chopped parsley
Combine all but the parsley and half the mozarella in a greased skillet. Sprinkle the other half of the mozarella on top. Bake 20 minutes until bubbly. Then broil a few minutes until the top is brown.
Sprinkle with parsley and serve with your favorite tortilla chips or bread.
You can vary this recipe almost however you wish! Add most spinach and/or less cheese for a healthier version.
And we’ll often simply wilt spinach and melt cheese on a skillet and serve as a simple side dish.
I made this for an Easter Dinner Appetizer at my in-laws and it was a huge hit. I will definitely make this again.
